Danish Apple Cake

Ingredients
225g gluten-free plain flour
3 level teaspoons gluten-free baking powder
1/4 teaspoon xanthan gum
225g golden granulated sugar
225g dairy-free margarine
4  eggs
2 teaspoons mixed spice
1 teaspoon vanilla extract
4 x Gala or red apples, washed, peeled, cut into 1 inch cubes

2 sweet red apples, washed, not peeled, cut into thin wedges to decorate

for the Cinnamon Sugar topping:
1/4 cup of golden granulated sugar
2 teaspoons ground cinnamon

What to do
Preheat your oven to 180'C / 350'F / Gas Mark 4.  Lightly oil a 17 cm round baking tin.

Sift together the gluten-free flour, gluten-free baking powder, xanthan gum & mixed spice in a large bowl.

Add all the other ingredients into the bowl, and whisk together until the mixture is lighter and creamier in colour.

Stir in the apple pieces until well coated and evenly distributed.

Pour the mixture into the prepared tin and gently smooth over the surface.

Arrange the apple wedges over the top.

Mix the cinnamon sugar ingredients together and sprinkle to taste, evenly over the cake.

Bake for about 50-60 minutes, or until a skewer inserted into middle of the cake and comes out clean. 

Leave to stand for 10 minutes before turning out onto a cooling rack. 

When cold, dust with a little icing sugar and serve warm or cold.  Dairy-free ice-cream is perfect with this cake!
