Tomato Sauce


25g dairy-free margarine
25g gluten-free plain flour 
pinch of xanthan gum
226g tin of chopped tomatoes made up to 275ml water

1 tablespoon tomato puree
1 bay leaf
salt & freshly ground black pepper


Place all the ingredients in a saucepan, gently bring to a steady boil, stirring continuously.

Reduce the heat, cover and simmer gently for 10 minutes.

Remove the bay leaf.

Serve with Brazil nut ring, gluten-free sausage, meat or fish dishes.
