Chicken Supreme

gluten-free dairy-free


Ingredients:

Olive oil
1 small onion, finely chopped
1 garlic clove, crushed
1 x 5ml spoon (1 teaspoon) dried coriander
2 x 5ml spoon (2 teaspoons) dried parsley
1/2 lemon, juice only
1 medium tub of dairy-free cream
2 chicken breasts, diced in to 1/2 inch cubes
Salt & freshly ground black pepper to taste
Gluten-free pasta shapes, or tagliatelle 

What to do:
  1. Pan fry the chicken in a little of the olive oil until cooked through, then set aside.
  2. Cook the gluten-free pasta in boiling salted water and drain.
  3. Gently fry the onions and garlic for 5 minutes to soften, then add the parsley, dairy-free cream, lemon juice, chicken and seasonings.
  4. Stir well and serve immediately!
