Coleslaw Salad

A fresh & crunchy salad to accompany your favourite meal!



1/2 white cabbage, finely shredded
1 raw carrot, peeled and grated
1 stick celery, finely chopped
1 onion, peeled and finely chopped
1 red apple, cored and sliced, optional
1/4 red or green pepper, de-seeded and thinly sliced
2 tablespoons sultanas or raisins, optional
25g walnuts, chopped
chopped parsley to garnish, optional
1/4 pint dairy-free mayonnaise



Place the mayonnaise into a deep bowl.

Toss all the ingredients into it and mix very well then chill in the fridge.

If made the day before, this will enhance all the flavours, as they combine beautifully!

To serve, garnished with chopped parsley.
