Tomato and Orange Soup

This gluten-free & dairy-free soup combines tomatoes with fresh orange, is so colourful to prepare and super easy to make!
The deliciousness of this soup is what makes it a winner every time!

Serves 8 

Ingredients

2 x 400g tins of tomatoes
1 onion, peeled and sliced
2 medium carrots, peeled and sliced
3 bay leaves
1 thin strip of lemon rind
8 peppercorns
1 litre vegetable stock
pinch of salt 
1/2 orange, juice and grated rind of
2 teaspoons sugar
150ml dairy-free cream
40g dairy-free margarine
40g gluten-free plain flour
small pinch of xanthan gum


What to do

In a large, heavy-based pan place the tomatoes, onion, carrots, bay leaves, lemon rind, peppercorns, vegetable stock, salt, orange juice and sugar. 

Stir well and bring to the boil, cover and simmer for 35 minutes.

Liquidise in the pan with a stick blender.


Sift together the gluten-free flour and xanthan gum, then add to the pan along with the dairy-free margarine.

Bring back to the boil, continually whisking, and beat until smooth and thickened.

Add the dairy-free cream, stir well and serve with crusty gluten-free bread or gluten-free croutons!

Tip: This soup is just as delicious cold and is very refreshing!
