Grandma Sheila's Boiled Fruit Cake

An easy recipe from our Grandma Sheila, to bake a hearty treat at any time of the year!  
Double the quantities to make two - one for now, one for the freezer!



Ingredients
115g dairy-free margarine
1 cup brown sugar
1/2 cup sultanas or currents
1/2 cup pitted dates, chopped small
1 cup dairy-free milk
2 cups gluten-free plain flour
1  1/2 teaspoons gluten-free baking powder
1/4 teaspoon xanthan gum
1 egg, beaten

What to do
Preheat your oven to 160 C / 325 F / Gas 4.  Lightly oil a 1lb loaf tin.

In a large pan place the dairy-free margarine, brown sugar, sultanas or currents, pitted dates and dairy-free milk.

Slowly heat until it has reached boiling point, then remove from the heat and allow to cool for 15 minutes.

Sift together the gluten-free flour, baking powder and xanthan gum.

Add this to the pan with the beaten egg and beat very well, until the mixture is smooth.

Pour into your prepared loaf tin and bake for 1 hour, or until a skewer inserted into the middle of the cake comes out clean.

Leave to stand for 5 minutes, then turn out onto a cooling rack.

Serve in slices warm or cold.
