French Onion Soup

This traditional and simple recipe for French Onion Soup, is a classic from the 50's and 60's, made gluten-free and dairy-free.  It is as popular today as it ever was because it's so tasty!

Ingredients
4 medium onions, sliced finely
1  1/2 pints of vegetable or beef stock
55g dairy-free margarine
1 clove of garlic, grated
250ml dry white wine, or good splash of sherry
Sea salt crystals and freshly ground black pepper
55g dairy-free cheese, grated

1 gluten-free French Bread Stick

What to do
In a heavy-based pan, melt the dairy-free margarine and slowly fry the onions and garlic together, until lightly browned.

Add the beef or vegetable stock and the white wine or a splash of sherry. Then season with the sea salt and freshly ground black pepper, to taste.

Cook for about 25 minutes until the onions are really softened.

To serve - Slices of gluten-free French Stick, sprinkled with grated dairy-free cheese and lightly grilled. Sprinkle fresh herbs on top and delight your guests!
