Leek Broth - An Old Welsh Recipe

This simple recipe for Leek Broth is tasty and nourishing.  It is an old Welsh recipe that is economical and satisfying!
Serves 4-6

Ingredients
6 Leeks, sliced thinly
3 potatoes, sliced thinly
1.2 litres of dairy-free milk
570ml of vegetable stock
30g dairy-free margarine
Freshly ground black pepper and salt to taste
A handful of fresh chopped parsley, to serve

What to do
In a heavy-based pan, place the potatoes, leeks and dairy-free margarine with just enough water to cover. 

Simmer gently until softened, then turn off the heat.

Liquidise with a hand or stick blender, then add the dairy-free milk, vegetable stock, pepper and salt.

Reheat gently and serve with the chopped parsley sprinkled on top.
